Kněžské, CHARDONNAY, sur-lie, late harvest, dry, 2020

Grapes from the Kněžská vineyard in the wine-growing village of Mikulčice with a very reduced harvest. The wine was fermented and aged on all yeasts in Francois Freres M, Nerthomieu M+ TH, Berthomieu M and Ermitage Bertrange M+ TH barriques for eleven months, without any addition of sulphur, with malolactic fermentation completed using pure bacterial cultures. The wine is pale golden yellow in colour with aromas and flavours of citrus fruits, acacia syrup, baked apple, with a biscuit aftertaste and a slight smokiness on the finish. The wine is fresh, acidic, with a strong fruit character and very harmonious with a fine ripe acidity despite the ‘zero’ residual sugar. Unfiltered.

Recommendation:

For thick, creamy soups, white meats, cream sauces, pâtés and seafood.
